Macaroni Cheese made with Welsh Cheddar

A Welsh twist on a traditional favourite…

  • 225g/8oz Pembrokeshire Mature Cheddar, grated
  • 50g/2oz parmesan, grated
  • 225g/8oz Macaroni
  • 40g/1 ½ oz Welsh butter
  • 40g/1 ½ oz plain flour
  • 568ml/1 pint Milk

Cook the macaroni in a large pan of boiling water for 8/10 minutes (add salt if required), drain well and set aside. Then melt the butter over a low/medium heat, add the flour and stir to form a roux. Cook for 1-2 minutes and then gradually whisk in the milk a little at a time and cook, stirring all the time, until thickend to a smooth sauce. Remove from the heat and stir in 175g/60z of the cheese until melted. Add the macaroni to the sauce, mix well and transfer to an ovenproof dish. Sprinkle over the remainder of the cheddar & parmesan and place under a hot grill until browned. Serve immediately. For a twist, add halved cherry or sundried tomatoes.
